Two summer desserts that let vanilla shine

Two summer desserts that let vanilla shine

Summer isn’t just about sun and strawberries — it’s about slowing down, savoring what’s in season, and letting simple ingredients speak for themselves. At Prema Vanilla, we believe that great vanilla doesn’t need much — just a little space to shine.

Today, we’re sharing two beautiful summer recipes that put our pure Madagascar vanilla beans at the heart of each bite. They're easy to make, full of flavor, and perfect for slow evenings, garden dinners, or a quiet treat on your own.

🍋 Vanilla-Citrus Granita

A frozen dessert that sparkles with sunshine

If you’ve never made granita before, think of it as a relaxed version of sorbet — no fancy equipment, just a fork and a little patience. This version blends fresh orange and lemon juice with a touch of sugar and real vanilla bean. The result? A light, icy dessert with a bright citrus kick and the smooth, floral depth of vanilla.

Ingredients:

  • 1 cup fresh orange juice

  • 1/2 cup fresh lemon juice

  • 1/2 cup water

  • 1/3 cup sugar

  • Seeds from 1/2 Prema Vanilla bean

How to Make It:

  1. Make a simple syrup with water and sugar.

  2. Stir in vanilla seeds and let the syrup cool.

  3. Combine with the citrus juices and pour into a shallow dish.

  4. Freeze, scraping every 30 minutes with a fork, until light and fluffy.

  5. Serve in chilled glasses — with or without a splash of Prosecco!

Light, refreshing, and completely dairy-free. A little sunshine in every spoonful.

🍓 Vanilla Bean & Balsamic Roasted Strawberries

Slow-roasted, sticky-sweet, and fragrant with real vanilla

This is one of those recipes that feels luxurious with very little effort. Just fresh strawberries, a splash of balsamic vinegar, and the unmistakable scent of real vanilla bean — all gently roasted until syrupy and soft.

Ingredients:

  • 500 g ripe strawberries

  • 2 tbsp sugar or honey

  • 1 tbsp balsamic vinegar

  • Seeds from 1 Prema Vanilla bean

  • Optional: thyme leaves or pink peppercorn for a twist

How to Make It:

  1. Toss strawberries with sugar, balsamic, and vanilla.

  2. Let sit for 10 minutes.

  3. Roast at 180°C (350°F) for 25–30 minutes until soft and glossy.

  4. Serve warm or cold over ice cream, pancakes, yogurt, or toast.

A cozy kind of summer indulgence — earthy, floral, and unexpectedly deep.

Why Use Real Vanilla?

In both recipes, vanilla plays a starring role — not just as a background flavor, but as the ingredient that brings everything together. The citrus becomes softer, the strawberries more aromatic, the syrup richer.

Prema Vanilla beans are grown with care on our own farm in Madagascar and dried slowly to preserve their intense flavor. You’ll taste the difference in every spoonful.
