In the 16th century, Spanish explorer Hernán Cortés introduced vanilla to Europe. It quickly became a prized ingredient, often reserved for nobility. However, for centuries, vanilla remained exclusive to Mexico, as the orchid’s pollination depended on a single bee species—the Melipona bee—found only in its native habitat.
The Cultivation Breakthrough
For nearly 300 years, vanilla could not be grown outside of Mexico. This changed in 1841 when Edmond Albius, a young enslaved boy on Réunion Island, discovered a method of hand-pollinating vanilla flowers. His technique revolutionized vanilla farming, making large-scale cultivation possible in new regions, especially Madagascar.

By the early 20th century, Madagascar had perfected the cultivation and curing process, producing the rich, creamy Bourbon vanilla that remains the gold standard today. The labor-intensive process—from hand-pollination to meticulous drying and curing—gives pure vanilla its unparalleled depth of flavor.
